About Me

As of November 2009 I chose to follow a vegan lifestyle after reading Alicia Silverstone's The Kind Diet. For those who do not know what a vegan lifestyle might encompass is a lifestyle that focuses on NOT  consuming any animal or dairy products. Many have told me that was a drastic change from being a meat-eater, but in reality it is not too drastic.

Back in 2003 to 2004, I was a vegetarian (no meat but dairy and eggs ok) and I felt so great. I lost 40 pounds and felt lighter than ever. After a year and a half, though, I fell off the bandwagon and reintroduced animal and dairy products. I gained the weight I lost and gained even more! I became very unhappy and then all of a sudden something snapped in my mind and knew I had to take action on my eating habits. Drastic ones for that matter. My choice to choose vegan was not solely about NOT eating animals, but having a plant-based eating lifestyle focused on whole foods. God sure had a part in this change since my discipline definitely does not come from JUST wanting it. God daily gives me the strength to focus on food with a healthy outlook. Since going vegan, I have lost 16 pounds and am looking forward losing more!


A little more about myself: I am half Chilean and half Mexican and grew up most of my life in Texas. I met my husband while attending music school in college, but we did not start dating until 6 years after we graduated. I graduated with a vocal performance degree and I married a conductor, who is currently finishing his Doctorate. We moved to Michigan in June 2009 and have enjoyed watching seasons. I am a certified and registered pharmacy technician and currently work from home. I also take voice lessons and am slowly but surely getting involved in the musical world up in this snowy part of the world.


I have always enjoyed cooking and have loved creating vegan dishes and recipes. Even though my husband cooks it has become a little more difficult to cook something I can eat but he is also a GREAT cook. I chose the title of Opera Singer in the Kitchen, because I love to sing and I love to perform when I get a chance. I hope to share a little of my musical taste along with my kitchen creations.


NEW: In 2011, I got pregnant and everything changed for me. Some may say it was an excuse but my body completely reacted differently. I was not able to maintain a vegan lifestyle while I was pregnant so I went back to eating meat products.

I had my baby girl in November 2011 and I have already lost 40 pounds and am back to my pre-pregnancy weight. Unfortunately a lot has changed for me and I am trying to figure out how to transition back to being vegan or if that is the right thing for me. It has always been about HEALTH and not ETHICS so my focus will still continue to be cooking healthy foods and eating in moderation.
