We are busy and almost all done with our packing a little over a week before we head off to Pennsylvania.

Julianne discovered the mirror and was loving talking to her "new" friend. :-)

100 degrees in Michigan???

Yes, it is quite unreal and so Texas. I was glad to find cooler temperatures when I knew we were moving to Michigan but this summer has been pretty horrendous. Our poor dead grass can attest to this heat.

What does this also mean? It means we do not leave our home except for emergencies or if we are melting ourselves. See, we do not have central air.

'Tis true. How is the little one surviving? Well,we are all surviving.

Watermelon Popsicle

Thanks to some lovely friends we have been living on a window unit for the past 2 years. We melted the first year before these friends let us borrow it the 2nd and 3rd years. SIGH....we learned the hard way.

We had all the intention of staying indoors today but we have a teething child. This is probably the worst I have seen the poor dear but mixed with the warm air and the same toys I am sure I would be irritated too. 

What did we do? We took a little trip to Home Depot. The perfect place to take a cranky baby. Hahahaha. In fact, we were just plain BORED and TIRED of going to the mall. There are only so many times I can take that trip without needing to buy anything. If I dislike monotony, I am sure my baby does too.

Thanks to Ryan and a few errands we went down most aisles and came out with a box for Ryan's suits and a box knife. It was not a useless trip after all and Julianne liked smiling at people. She forgot that she was in pain.

Mojito Popsicles

So back to the heat. We have been enjoying popsicles over here. Since I am not baking anymore, I am being asked for popsicles. Ryan lets me know in the middle of the day what flavors would go together and all. He is funny!

We have lots of frozen fruit I need to use before we move so in addition to smoothies I am also making popsicles for a teething baby and my big baby. Hahahaha.

I made a creamy cinnamon-spiced cantaloupe popsicle that I liked but that Ryan did not like, after having just one. I found out that he really does not like melon. Oh well, more for me. :-)

I then came up with these beauties. I know I probably teased you but these do not have alcohol but can be added for those not breast-feeding. Too much info? Oh well. I am watching out for my alcohol consumption but you certainly do not have to. 

I had a SUPER sweet watermelon. I used half of it for this recipe and the other half to eat for breakfast. Julianne LOVES her juicy watermelon.

This is a quick recipe and is ready in 4 hours, if you can wait that long. I finally got to eat one for myself because every time I turned around, Ryan had one of these babies in his mouth. I am happy my hubby likes healthy desserts and these are definitely healthy, refreshing, and cold!


Watermelon Mojito Popsicles

Prep Time: 15 minutes
Cook Time: 4 hour freeze time

Ingredients (6 popsicles)
  • 8 cups fresh and ripe watermelon, cubed
  • 1/4 cup fresh mint, packed
  • 2-3 Tablespoons agave nectar or maple syrup
  • 3 limes, peeled and seeded
  • 6 ounces rum (optional)
Cut a large watermelon and peel. Cube fresh watermelon and add 8 cups to a Vitamix blender.

Using a sharp knife, remove the peel from the limes, cut in half and remove seeds. Add the halves to the blender as is.

Wash the mint and remove from stems and measure a 1/4 cup, packed. Add to the blender.

Add the agave to the blender. Place blender on base and blend using the plunger that comes with the blender. If you do not have that use a wooden spoon to nudge the watermelon to blend. Do not add any water. The fruit has enough liquid. Blend on high until mixture is smooth.
Divide the mixture between 6 popsicle molds and freeze for 4 hours.

We are moving!

I'm sorry it has been pretty quiet around the website lately but we have been SO busy lately! We are packing fiends and trying to keep sane around the house. We have a little more than 2 weeks before we move from Michigan to Pennsylvania and it is going to be a big move.

How is it going with a VERY active baby? Moving is a whole new monster with a baby in the picture. Thanks be to our God for giving us a new day because every day is really good. As long as I keep her schedule going around the moving, it goes well.

Last week we took a 12 hour car ride to West Chester, PA to check out the area, my hubby's work, and a place to live. Luckily, Julianne did really well with our car ride. It was hard at times because like me she got tired being in her car seat but we gave her plenty of car breaks as we did for ourselves. Every time we took her out she had a bigger smile as to say, "Finally, some freedom!" Poor girl, but she was sure a trooper.

It was a disappointing several days looking for places to live but at the end it looks like we might have found a place. Yes, I know. Here we are close to two weeks with no place to live. I have really needed to depend on God's strength for sanity. I am one to stress very easily while the hubby is the cool cucumber. I am glad because it is positive for me.


During one of out outings, Julianne and I hit a vegan spot in Bryn Mawr that Ryan found on Yelp. What a nice hubby eh? It is owned by a Brazilian guy and is the only vegan lunch spot in the area. It was delicious! I went with a Tofu Banh Mi on the most delicious grain bread with a special cilantro sauce. I totally want to make this! They also have natural sodas so I tried the ginger ale. Not too sweet at all.

Julianne got to try her first falafel and hummus. People were so impressed at how well she ate and how quite she was. I told them she took her meal times very seriously, like her mommy. Hahaha.

So now we are back home after a long trip and week but we are looking forward getting things all packed. I am getting my baking while I can and before it is all packed here this week.

I made Angela's Triple Almond Cherry Crumble Squares recipe but with Black Raspberry Jam and no almond extract (dang, I packed it up!). They were still a hit. I actually had to go to bed while they cooled but I gave my hubby permission to have a bar after I went to sleep. I woke up the next morning to find he ate two squares! Thanks for the great recipe Angela!

Secret Recipe Club: Banana-Blueberry Popsicles


I recently bought popsicle molds for us and for our teething babe.

These past two months have been a little hectic seeing we have plans to pack up our whole home and move to the East Coast. I was able to quickly choose a recipe and idea for the Secret Recipe Club. I think the summer months tend to be more difficult but I got to it.

Secret Recipe Club 

 This month I was assigned to Everyday Mom, who is a mother to 3 kids and is partial to cooking sweet items. She has an array of recipes but the best one that intrigued me were the popsicles. She inspired me to make a batch for our whole family and in return they came out so great!

I made two different batches. One had coconut milk and agave nectar and the other was just the fruit for Julianne.

Banana-Blueberry Popsicles

Prep Time: 10 minutes
Cook Time: 4 hours

Ingredients (6 popsicles)
  • 2 bananas, peeled
  • 2 cups blueberries, fresh
  • 1/8 cup water
  • 1/2 cup So Delicious coconut milk
  • 2 Tablespoons agave nectar

In a food processor, blend the bananas, blueberries, and water until smooth. Divide mixture in half. Pour one half into 3 popsicle molds. This will be for the baby.

Add the coconut milk and agave nectar to the other half in the food processor and blend. Pour the rest of the mixture into the other 3 molds.

Freeze overnight or for 4 hours. Enjoy! When removing the popsicle, run the mold under lukewarm water for a few seconds before the popsicle releases from the mold.

8 month update

8 months-Julianne

It has been a while since I have updated on Julianne. It has been QUITE busy around here that it almost feels like I am trying to keep my head straight.

Yes, I have been cooking and I have been taking some photos but we have been so busy that I am taking a little break for now. If anything I am posting on Instagram, @singerinkitchen.

So what are the new things Julianne is doing? She is sitting on her own and 2 weeks ago she started crawling!

8 months-Julianne being silly

She likes being super silly and even likes acting like a little doggie. She likes "D" words, like dog and duck. 

The world is no longer safe. We keep all cords out of her reach because of all her toys fun white and black computer cords are a lot more fun! Scary!

She gets SO excited when she starts crawling and mostly scoots with her arms and not her legs. It is quite strange but she gets places. I do notice she is using her legs a lot more though.

What did July 4th bring? Well Julianne's increasing independence. She pulled herself from her tummy to sitting position so now when we get her from her nap she is sitting and playing with her toys.

Wow! Looks like we will be lowering that crib cause I can only imagine her standing up next. YIKES. I do not think I am quite ready for this.

8 months-Julianne crawling

We have a lot of packing boxes around but we try to have enough distraction in the living room in order for her not to go anywhere else but she gets bored so I know she will have to start exploring the house soon. Why not? We are only here for 3 more weeks.

Something else Julianne has been enjoying are new foods. She has been cutting her 3rd tooth on the bottom to join her other 2 teeth so I made popsicles for US and for Julianne. Hers were made from blueberries and bananas. I helped her bite into it and she loved it. She started holding the stick the last 1/4.

I can't wait to make more for her to try and it seemed to sooth her gums too. Double whammy. Now that she has been moving a lot more she gets tired and is finally doing her naps. Thank God!

Hope everyone is having a nice summer. We are just so busy around here since we will be moving soon. I am just trying to stay sane. 


Clandestino Dining and VZW Savvy Gourmet Blogger

It seems like ages ago since I last posted. We have busy around these parts. Last week we were in Holland, MI for the entire week. It was my hubby's last week as Artistic Director of the Holland Chorale and his last concert. So sad but it has been a great 3 years!

On top of being away from home I also had something special planned. A 24 hour trip to Chicago. I am not usually close to blogging conferences to drive but when I was recently invited to be part of the Verizon Savvy Gourmet Bloggers, I quickly accepted the invitation.
