Here is another recipe to add to your Valentine's Day dessert options. This bar is almost decadent and almost like a blondie but is has chocolate, cherries and lots of flavor. It is also vegan and gluten-free!
You can make these gluten-free with store-bought Nutella as well if you do not have the time to make your own.

Nutella-Swirled Cherry Bars

Ingredients (9 bars)
- 3 Tablespoons coconut oil, melted
- 1 cup applesauce
- 1/2 cup maple syrup
- 1 flax “egg”
- 2 Tablespoons flax seed meal + 6
- Tablespoons warm water
- 1 teaspoon almond or vanilla extract
- 1 1/3 cup Bob's Red Mill Gluten-Free AllPurpose Flour
- 1 teaspoon baking powder
- ¾ cup dried sweetened cherries
- 6 Tablespoons homemade Nutella
Homemade Nutella(make the night before)
- 1 cup cashews, toasted
- ¾ cup almond milk
- 1 teaspoon vanilla
- 2 Tablespoons powdered soy milk
- 6 Tablespoons organic cocoa powder
- 10 Tablespoons agave nectar
Instructions
Prepare raw nutella the night before. Toast the cashews for 15-20 minutes on a baking sheet in a preheated oven 400F. Remove from oven and let the nuts cool.
Add the nuts ad the rest of the ingredients to a food processor or high-powered blender and blend until smooth.
Preheat oven to 350 degree and spray a 9x9 dish with non-stick spray.
In a medium, prepare the flax “egg” and set aside for 3 minutes. Add applesauce, maple syrup, and extract to the flax “egg” and mix well. Add melted coconut oil last.
In separate bowl, mix the gluten-free flour, baking powder. Add to the liquid mixture and mix well. Add the cherries to the mixture and stir until evenly mixed. Pour HALF the mixture into the 9x9 dish and add 3 Tablespoons of Nutella to the middle of the mixture. Swirl with a knife.
Add the remaining dough on top and add 3 more generous Tablespoons of Nutella and swirl with a fork or knife across in one direction and then the opposite way.
