Blueberry Smoothie and Oatmeal


Wow, I feel like I have had a LONG weekend since I am just now getting back to an entry this morning. Is it Saturday? My days feel all turned around!


Good news to report! After having gone almost all summer without singing I finally got to sing this past Sunday at a local church. I had noticed, since being pregnant, that my breath support is different or rather it takes more effort to support. I get out of breath more easily singing the hymns at church so when I was asked to sing this past Sunday I was a bit hesitant. I know, I know. I was not paralyzed, but I wanted to be able to sing with just as good technique as before being pregnant.


I loved singing! It had lovely high notes and I had no trouble breathing or keeping it supported. I was just sweating because it seemed like I was doing a mini workout. GO figure! Ha ha ha.  I sing another solo this coming Sunday so I am looking forward to it. How about exposing your little one to music? This is a great way! :-)


We returned from a mini business trip to Pennsylvania last night. I decided last minute to accompany my husband on an 8 hour road trip to Penn State where he was presenting a topic at a music conference. Let me tell you how I no longer can do road trips. We stopped every 2 hours for stretch / potty breaks and I also switched from lying in the back seat with pillows to sitting up front with Ryan. All in all it was ok until the way back last night. I am glad I went but it is a total new ball game.

I came home to open a nice gift from my MIL. How cute are these? I could not keep from holding them up and imagining my little girl in them....sigh...she will be here soon.

When I woke up this morning I craved blueberries so I decided to make a smoothie. Not only did I want a smoothie but I wanted oatmeal too. I find that breakfast has become the most important meal because it is when I most feel like cooking and most feel like eating. How about that?


This is a 2-in-1 breakfast. You can have the smoothie by itself or you can have half the smoothie and blueberry smoothie oatmeal.

I had a So Delicious Coconut Greek-style yogurt left to try from my samples and decided to add it to my smoothie. Did you know it has 6 different types of live cultures? Yum! I decided to try a spoonful before adding it to the smoothie and boy was it creamy!

I added this to my morning smoothie along with some coconut water, coconut milk, maca powder, flax seed oil, and protein powder. It was so thick and creamy that I decided to add half of it to my oatmeal.

It inspired my Blueberry Smoothie Oatmeal because you do not have to cook the blueberries in the oatmeal but just mix in the blueberry smoothie for a delicious combination. You get lots of protein with the yogurt and you get the healthy antioxidants from the blueberries. I also added some fresh blueberries as a topping. I can feel this keeping me full until way past lunch time. Hope you try it!

Now, just a reminder. So Delicious Coconut Greek-style yogurt is NOT yet on shelves, BUT it will be soon. I was given some samples to try but you can use the regular coconut yogurt they offer in stores for the meantime.

Blueberry Yogurt Smoothie

makes 2 servings (16 ounces)

1-6 ounce container So Delicious Blueberry Coconut Greek-style yogurt
   (You can use the regular coconut yogurt)
1/2 cup coconut water
1/2 cup So Delicious Coconut milk
1 cup blueberries, frozen or fresh
1 Tablespoon flax seed oil
1 Tablespoon maca powder (optional)
1 Tablespoon protein powder (optional)

Blend in a high powdered blender until smooth. Divide between 2 glasses and sip.  Or divide between 2 cereal bowls.

Blueberry Smoothie Oatmeal

1 1/2 cups oatmeal (gluten-free)
3 cups water
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/4 cup maple syrup or agave syrup
blueberries for garnish

Boil the water in a medium pot. When it boils add the oatmeal, cinnamon and vanilla extract. Cook for 10 minutes on medium heat stirring often. Remove from heat and add sweetener.
 
Divide the oatmeal in the cereal bowls containing the blueberry smoothie and mix well. Garnish with blueberries. So GOOD!

I just haven't been able to bring myself to eat much oatmeal in the summer heat, but I miss it for breakfast (I have managed to bake with it a ton, though). That smoothie sounds so good...as does a yogurt with a fruit/coconut combo flavor!

Sitting was so hard for me in my last trimester. I even put my feet up on the pews at church near the end! I feel for you!

Congratulations on singing again! I imagine the breathing is different! The oatmeal and smoothies look incredible...and the baby clothes are adorable! I don't know if I told you, but I'm very excited about your baby...

Congratulations on going back on stage again. It must exciting for you. I love the blueberry yogurt smoothie recipe. It looks very refreshing and the color looks so much fun. Definitely gonna try that.

I am so glad you started singing again! I just started painting again (after a much longer absence), and it reminded me how self-nurturing creative expression can be.

I am literally swimming in blueberries, and I cannot wait to try both of these yummy-looking recipes! I love the new So Delicious Greek-style yogurts. The blueberry and raspberry flavors are my favorites!
