Remember a while back I shared a lovely review Kelapo coconut oil with the Apple Crumble Pie? You'd better! If not, go and check it out. The apple crumble pie turned out to be a delicious and very different dessert when it came to using coconut oil.
Coconut oil does not only have to be used with baking but I use it when I oven-roast potatoes or vegetables or when I fry noodles for Asian dishes. I happen to use coconut oil more in desserts because it is a preference and well, the flavor of coconut in meals is not one of my husband's favorites, so I leave it for desserts where the coconutty flavor can be part of the dessert.
Another dessert I love to make often are my Deep-Dish Chocolate Raspberry Oat Bars. They are super quick and not oily at all!
The folks at Kelapo have generously donated an 8-ounce bottle of their coconut oil to give away to one reader.
Here is a simple way to enter:
Leave a link, in the comment section, of a recipe where you have used coconut oil before

I've used coconut butter AND coconut oil in the summer berries & vanilla sweet cream I posted recently.
I've never tried Kelapo Coconut products yet. Would love to though.
I love cooking and baking and using coconut oil. It lends a richness and moistness to baked and cooked foods. It's also works fab for greasing baking pans for baked breads, lends them an incredible crust and moist and chewy interior, this is great for Gluten-free breads. I use it in my sauteed or fried foods also. I also use it for making my own body balms and such. There are too many recipes to try to even think about linking to.
Hope that covers the recipe part! :) I follow you on Facebook, subscribe to your blog, and now follow Kelapo Coconut on FB. Sorry I don't do Twitter, I have enough to keep up with FB. :) And have shared your post on FB. :)

Hi Noelle! I did some FB and Twitter following and am now posting because I've never used coconut oil before and would like to try it! I think I would make your apple crumble pie because it sound DELICIOUS and that is my favorite kind of pie! (Plus I have lots of apples to use up right now.) :)
I haven't tried coconut oil yet, but I LOVE the idea of using it with roasted potatoes!

My favorite coconut oil recipe is raw vegan cheesecake (raw cashews, lemon, agave, coconut oil). Since coconut helps things to solidify AND it tastes good, the cheesecake comes out with the perfect consistency. Love it...and I'm out of coconut oil right now...

I LOVE coconut oil, it is the only oil I use for baking. And I use it for cooking and moisturizing too!
Any veggies sauteed or roasted in coconut oil taste amazingly good and all my muffins and baked goods I make with coconut oil now.
My favorite recipe I came up with using coconut oil are my Sweet Potato Muffins, here is the link: http://kitchenspace.blogspot.com/2011/01/best-and-fluffiest-sweet-potato-muffins.html

I use coconut oil for cooking and baking. Love it in stirfry and I just drizzle it on my squash with a little sea salt. Yum!

Never tried it, but would love to! I bake all the time, so I'm not sure where to start. It would be awesome if I could use it in place of dairy-free margarine in cookies. I definitely want to try BOTH recipes that you posted.

I love using coconut oil to make banana and coconut muffins. So good!
I don't have a link for a specific recipe on my blog I don't think - most of the time we just throw it in wherever! Like in smoothies or spread on toast or stir fry veggies in. I've even used it in place of butter in waffles. :)

I'm not sure if this is open to Canadians, but just in case: I've never used unrefined coconut oil before, but I'd like to try using it in brownies. I think a coconut flavour would go really well there.
