So I have 8 hours at the airport before boarding and getting to see my dear husband! 6 days is way too long being away from your loved one but it was nice visiting with girlfriends and soaking in the snow and clean air.While on one of our treks we decided to take one of my girlfriends to her favorite restaurant for her birthday. Her kids were loaded in the car and her husband and the rest of the gang headed in. We were on our way to


Longmont, Colorado which was a little more than an hour away from their home. It had been nearly a year that my friend and husband had gone to Tortuga's so we thought we would make it a point to make it happen. The 2 year old had taken a nap and the baby took a nap while we went our way.


On the way we sawa field of elk, which is really hard to get a picture from a moving car, but you get the picture right?

Tortuga's is a Caribbean-style restaurant that features seafood, but I was confused because it felt like it was a fusion of cuisines. It was a little Cajun, Cuban, Puerto-Rican and more. One of my friends ordered the scallops, another ordered seafood etouffee', and her husband ordered the pork chops.


When I took one look at the menu I knew perhaps I might be in trouble UNTIL I saw black beans and rice, plantains, and vegetable of the day. Who can argue with that?? Except, well, I guess I am such a girl, but when I got my dish:

 Um, yes, that is sour cream drizzled on my beans. Sigh. You gotta be so specific to people. My plantains ended up being TOSTONES, which are the green plantains fried,salted, and fried again. I thought plantains meant sweet bananas, which I later talked to the manager and told them their menu was incorrect. Yes, I do that. A small town restaurant needs to know! :) ANYWAY, my vegan meal was nice and bland but it fed me well. Everyone in the non-vegan category was well pleased with their dish and everyone was happy!

There is no available website for the restaurant but it IS a nice building and a great environment. Nice stop on the way to Estes Park. Check it out.

My go to fast dish isn't a recipe, but a product! It's Roads End Organics Mac and Chreese, a box mac and cheese. You heat the noodles, then melt some margerine, almond milk and chreesy powder together to create the cheese (I always add my own spices and usually some tvp to protein it up), dump the noodles into the sauce, and voila! Quick, easy dinner.

My favorite to-go dish is quinoa salad with onion, tomato, cilantro, black beans, corn, with a dash of balsamic vinegar and salt. Just need to remember to bring a spoon and you're good to go!

My favorite vegan go to dish is spelt penne with sun dried tomato spread and tofurkey sausages. Done in under 15 minutes!

I live in CO! I am having such a hard time eating out a restaurants.

I very new to being vegan, so I don't have too many recipes I go to for a fast dish, but I like pad thai. So I just use some peanut oil, tofu, spices, and really whatever veggies I'd like. Heat them in a wok, and put over noodles! Done!

Pasta is an easy one, but not too creative, and I kinda feel guilty after eating a huge bowl of it. So I make this Chana Masala recipe because I normally have everything in the cupboard to make it. Toss in some spinach and I'm good to go :)

My favorite fast-and-easy vegan meal is to cook a sweet potato in the microwave and then serve it with some Tofurky kielbasa. It's so quick and surprisingly tasty. Thanks for the great giveaway!

I like to make baked potatoes with broccoli and a nooch-sauce. It takes some time to bake the potatoes, but it's not active time. It's total comfort food!

What a great give-away! My favourite go to meal is stir frying a load of veggies, adding some stock and soy sauce and some hoisin sauce then adding some noodles and making a delicious noodley brothy soup. YUM!

Tortuga, what a great concept and then waiting in anticipation for ... sour cream. Yeah, you do have to be so so specific. I usually start out with, "Hi, I'm a vegan, do you know what that means?" and then go into minute detail after that.

My go to meals are all processed. Lightlife meats, boca burgers, or premade vegan chicken salads, on vegan bread toasted, daiya cheese melted, some mixed greens and I'm golden. Nice flavors, crunchy and something you can sink your teeth into.

When I need something fast I blender-ize a jar of marinated artichoke hearts and a couple of cans of garbanzo beans (a little more or less, depending on the consistency I want). Slather on a thick slab of warm dense grainy bread for a quick sandwich or serve with veggies for a last-minute dip.
