I realized this morning that I did not post this recipe on my blog from an amazing breakfast I had yesterday morning. I also realized that I had not been posting my excellent exercising routines....right, because there have not been many.


Lately I have been playing racquetball with Ryan up to three times a week. The last few weeks we have been having great weather so I have been walking and at one point I rode my bike twice, but now this week it has been quite rainy and dreary. Have you heard about the fact that if you wear your work out clothes during the day that you will feel more inspired to workout? Sometimes it works and sometimes it does not. It just feels like you are in comfy clothes. LOL Either way, I have been trying to make mental notes the night before concerning the type of workouts I want to do the next day and somehow that works on certain days.


I believe I am going to start writing them down and posting them at the doorposts so that I know what workout regimen I am going to do THAT day. How do YOU get motivated daily?


Yesterday morning I had a big bowl of papaya but then realized that perhaps this fruit was NOT quite in season. The papaya seemed to be ripe and ready to be peeled and cleaned but I bit right into it and it was SUPER flavorless. SO disappointing. I am going to be making a blended tropical drink tomorrow morning.
I have tried squirting lime juice to offset the lack of flavor the fruit had but it failed. I then decided to make some steel cut oats.


I have always eaten oatmeal with the rolled oats but steel cut oats are healthier from what I read. Ryan prefers to have his with rolled oats, brown sugar, and raisins. I told him this morning that he needed to try this new recipe of mine tomorrow. A few weeks ago I was at Trader Joes in Ann Arbor and I picked up some natural peanut butter with roasted flaxseeds. It sounded so delicious and I had yet to try it. I added some to my oats and it was SOOOO good. If you have never added peanut butter or almond butter to your oats it is a must!

Tropical Steel Cut Oats


serves 2


1 cup steel cut oats
1 1/2cups water
1/4 cup goji berries
1 Tbsp cacao nibs
1 Tbsp shredded unsweetened coconut
1 Tbsp Trader Joe’s Peanut Butter w/ roasted flaxseed
2 Tbsp coconut milk
1 Tbsp agave nectar


Soak oats in 1 cup water for 30 minutes. After soaking time, add oats and water and remaining 1/2 cup water to medium pot. Cook on medium heat for 10-15 minutes.


Remove from heat and add coconut milk,goji berries and agave. Mix well.


Serve and top with coconut, nibs, and peanut butter.

Sounds delicious! What kind of coconut milk did you use? Raw? Canned? Carton?

We've used all of the above and really prefer the raw, the coconut milk in cans and cartons is very convenient.

@Fayinagirl- I used SODelicious' brand it is refrigerated coconut milk but I am sure any form of coconut milk would work. Thanks for asking!

Yum, I LOVE oatmeal with coconut. And PB with oatmeal is a MUST! ;)

I find that once I put on my workout clothes, I feel more inspired to exercise - it's just hard getting into the clothes in the first place :P

I think it helps me sometimes to wear my workout clothes, it may get me moving a little faster haha. Your oatmeal looks beautiful, can you make me some? :)

Papaya is one of my favorite fruits. Since it is so expensive here in Korea (if it can be found) I never eat it here. Always one of the first I look when I am traveling in South East Asia.

I'm not an oatmeal eater. That being said, this recipe does sound good.

To answer your question, I get inspired to exercise by doing it very early in the morning, so I'm already doing it by the time I'm fully awake ;) this also gets it done and dusted and out of the way!
